One Pot Chicken Mushroom Fusilli

A quick, delicious one-pot pasta dish — minimal mess, maximum flavour.

List of Ingredients

1tsp E/V Olive Oil
1tbsp Butter
300g Chicken Breast (cubed)
1tsp Garlic Seasoning
400g Fusilli
1pkt Mushroom Sauce
150g Mushrooms (sliced)
1 Small Shallot (finely diced)
Fresh Basil (chopped)
Salt & Pepper (to taste)

Instructions

Prepare ingredients

Cube the chicken and season lightly with garlic aromat, salt, and pepper. Slice the mushrooms and finely dice the shallot. Chop the fresh basil and set aside.

Cook the pasta

Bring a large pot of salted water to a boil. Add fusilli and cook according to package instructions (usually 10–12 minutes) until al dente. Drain and set aside, reserving a small cup of pasta water.

Sauté chicken

Heat olive oil and Flora spread in a large pan over medium heat. Add the cubed chicken and cook for 5–7 minutes, turning occasionally, until lightly golden and cooked through. Remove chicken from the pan and set aside.

Cook mushrooms and shallot

In the same pan, add the diced shallot and sauté for 2–3 minutes until soft. Add the sliced mushrooms and cook for another 5 minutes until tender.

Prepare the sauce

Prepare the Knorr mushroom sauce according to packet instructions, adding a little reserved pasta water if needed to loosen the sauce.

Combine everything

Return the chicken to the pan with the mushrooms. Pour in the prepared mushroom sauce and stir well. Add the cooked fusilli and toss to coat evenly with the sauce.

Finish and serve

Sprinkle chopped basil over the pasta. Adjust seasoning with salt and pepper if needed. Serve immediately, garnished with extra basil if desired.
