Packed with tender chicken, crisp vegetables, fresh herbs & a zesty sesame-lime dressing. It’s a colourful, protein-rich salad that’s perfect for meal prep, outdoor lunches, or light summer dinners.

List of Ingredients

200g (7oz) bulgar wheat (medium)
700g (1.5lbs) cooked chicken breast, diced
200g (7oz) red cabbage, finely sliced
2 medium carrots, grated
4 spring onions, sliced
handful fresh coriander, chopped
1 tbsp black sesame seeds
3 tbsp light soy sauce
2 limes, juiced
1 tbsp sesame oil
1 tbsp Carrefour Honey Millefiore
1 tsp grated fresh ginger
1 garlic clove, crushed
Pinch chilli flakes

Instructions

Cook the bulgar according to packet instructions. Drain and cool.

In the meantime, whisk together all dressing ingredients.

In a large bowl, combine the barley, chicken, cabbage, carrots, spring onions, and coriander.

Remove the garlic from the dressing, pour over the salad and toss well.

Sprinkle with sesame seeds before serving.
