Veggie Feta Pasta

A 3-minute preparation time vegetarian pasta dish. Simple, yet delicious.

List of Ingredients

400g Fusilli or Orecchiette Pasta
100g Cherry Tomatoes
1tbsp Extra Virgin Olive Oil
200g Feta Cheese
1 Packet Frozen Garden Mix
1/2tsp Chilli Flakes
Fresh Parsley (finely chopped)
Salt & Pepper to Taste

Instructions

1. Cook the pasta

Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (~10 minutes). Drain and set aside, reserving a small cup of pasta water.

2. Cook the vegetables

In a large pan, heat olive oil over medium heat. Add frozen garden mix and sauté for 3–4 minutes until heated through. Add cherry tomatoes and cook for another 2–3 minutes until slightly softened.

3. Combine pasta and cheese

Add cooked pasta to the pan with vegetables. Sprinkle in crumbled feta or Greek-style cheese. Toss gently to combine. Add a splash of reserved pasta water if needed to create a light sauce.

4. Season

Stir in chilli flakes, salt, and pepper to taste. Sprinkle fresh parsley on top before serving.

5. Serve

Serve immediately as a light, flavorful, and healthy pasta meal.
