Braġjoli tal-Fqir (Corned Beef Cabbage Rolls)
A budget-friendly twist on traditional Maltese bragioli using corned beef and cabbage instead of beef slices

Prepare the Cabbage Leaves
Remove the hard stalk from cabbage leaves. Wash them. Bring a large pot of water to a boil and blanch the cabbage leaves for 2–3 minutes until soft. Drain and allow to cool.
Make the Filling
In a bowl, combine the corned beef, egg, breadcrumbs, grated onion, zucchini, carrot, parsley, pepper and a pinch of salt.
Assemble the Cabbage Rolls
Place a portion of the mixture in the centre of each cabbage leaf. Fold in the sides and roll tightly.
Cook the Sauce Base
Heat the olive oil in a deep pan. Fry the chopped onion until soft, then add the garlic and tomato paste. Cook for 1 minute.
Prepare the Tomato Sauce
Add the tomato sauce, Worcestershire sauce, gravy, and bay leaf. Stir well and bring to a gentle simmer.
Simmer the Cabbage Rolls
Carefully place the cabbage rolls into the sauce. Cover and cook on low heat for about 30 minutes.
Serve and Enjoy
Serve with mashed potatoes, rice, or fresh crusty Maltese bread.
