Protein Loaded Sweet Potatoes

List of Ingredients

2 sweet potatoes
100 g minced beef
1 onion, chopped
2 teaspoons garlic
A handful of chopped spinach
2 tbsp Italian mixed herbs
1 tbsp chili powder
2 tbsp paprika
4 tbsp tomato paste
Mozzarella cheese (for topping)

Instructions

1. Cook the sweet potatoes

Pierce the 2 sweet potatoes with a fork and place them in the air fryer at 190°C for 30 minutes. After 15 minutes, turn them over so they cook evenly.

2. Prepare the filling

While the sweet potatoes cook, sauté the chopped onion in a pan. Add the 2 teaspoons garlic and cook briefly until fragrant.

3. Cook the beef

Add 100 g minced beef and cook until browned.

4. Add spices and spinach

Stir in: • 2 tbsp Italian mixed herbs • 1 tbsp chili powder • 2 tbsp paprika • 4 tbsp tomato paste Mix well, then add the chopped spinach and cook for 1–2 minutes until it wilts.

5. Prepare the sweet potatoes

Once the sweet potatoes are cooked, remove them from the air fryer. Cut them in half and gently mash the inside with a fork.

6. Assemble

Fill the sweet potatoes with the beef and spinach mixture and top with mozzarella cheese.

7. Final bake

Place them in the oven until the mozzarella is melted and golden.
