Nut-Crusted Salmon

Juicy salmon fillets with a herb and nut crust.

List of Ingredients

2 Salmon Fillets
100g Mixed Nuts
50g Panko Breadcrumbs
1tbsp Mixed Herbs or Fresh Parsley (finely chopped)
1tbsp Mayonnaise
1pkt Kuskus (any flavour)
Pepper Fillets (to serve)
Salt & Pepper (to taste)

Instructions

1. Prepare the crust

In a bowl, mix the chopped nuts, panko breadcrumbs, and herbs. Season lightly with salt and pepper.

2. Prepare the salmon

Preheat oven to 180°C (350°F). Place the salmon fillets on a lined baking tray. Season with salt and pepper. Spread a thin layer of mayonnaise over the top of each fillet.

3. Add the crust

Press the nut and breadcrumb mixture onto the top of each salmon fillet, ensuring it sticks well.

4. Bake

Bake in the oven for 12–15 minutes, until: The salmon is cooked through The crust is golden and crisp

5. Prepare the couscous

Prepare the couscous according to packet instructions (usually adding hot water and letting it sit for 5 minutes). Fluff with a fork.

6. Serve

Plate the salmon alongside couscous. Add marinated pepper fillets on the side for extra flavor.
