Chorizo & Mushroom Pasta

A comforting, flavour-packed pasta bake loaded with smoky chorizo, juicy tomatoes, and mushrooms, finished with melty cheddar and fresh basil.

List of Ingredients

cooking spray
500g (1.1lbs) mushrooms, sliced
1 red onion, diced
500g (1.1lbs) cherry tomatoes, halved
3 garlic cloves, minced
1 tsp dried oregano
500g (1.1 lbs) pasta
75g (2.5oz) chorizo, diced
25g (1 oz.) cheddar, grated
Fresh basil, handful
s&p, to taste

Instructions

Preheat oven to 200C/400F/gas mark 6.

Spray a casserole dish, add mushrooms, onion, tomatoes, chorizo, garlic, oregano, and s&p. Toss to combine.

Cover with foil, bake for 15 minutes.

When cooked, uncover and add cooked pasta, chorizo, and half the cheddar. Bake uncovered for 10 minutes.

When done, top with remaining cheddar and fresh basil before serving.
