Paprika & Lime Chicken

A healthy, flavourful and fresh chicken dish without the extra calories.

List of Ingredients

1/2 Red Bell Pepper (sliced)
1/4 Chilli Pepper (finely chopped)
400g Chicken Breast (cubed)
1tsp Olive Oil
Rind of 1 Lime (grated)
Juice of 2 Limes
2 Garlic Cloves (sliced)
1tsp Sweet Paprika Powder
2tbsp Fresh Basil (finely chopped)
Salt & Pepper (to taste)
Cooked Rice

Instructions

1. Prepare the ingredients

Cube the chicken and season with salt, pepper, and paprika. Slice the red bell pepper and garlic. Finely chop the chilli. Grate the lime zest and squeeze the lime juice. Chop the fresh basil and set aside.

Cook the chicken

Heat olive oil in a large pan over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden and cooked through. Remove from the pan and set aside.

Sauté the vegetables

In the same pan, add the garlic, chilli, and sliced red pepper. Cook for 4–5 minutes until slightly softened but still vibrant.

Build the flavor

Return the chicken to the pan. Add the lime zest and pour in the lime juice. Stir well and let it cook for 2–3 minutes so the flavors combine and slightly reduce.

Finish the dish

Turn off the heat and stir in the fresh basil. Taste and adjust seasoning with salt and pepper if needed.

Serve

Serve hot over cooked rice. Optional: garnish with extra basil or a wedge of lime.
